Kinokuniya Bunzaemon was one of the top merchants in Kishu Wakayama in the Edo period. He risked his life, setting sail in the Kinokuni Mikan Boat laden with mandarin oranges and acquired great wealth in Edo. This sake brand that uses his name is one of our breweries’ leading sake brands that seeks to achieve a flavor that is distinctive of Wakayama. The daiginjo variety has a mild aroma and emphasized umami and flavor. Its luxurious and elegant ginjo aroma differs from that of junmaishu and junmai ginjo Kinokuniya Bunzaemon, and it features a unified taste that is refreshing and highly palatable. The varieties of rice used are carefully selected, and the gently flavor and noble aroma achieved with a focus on hand preparation are highly evaluated both within and outside of Japan.

Yamada Nishiki rice from Hyogo Prefecture is polished to 35% and the preparation is carried out painstakingly with cool and clear spring water from the foot of the Fujishiro mountain range. This top quality product is slowly fermented at low temperature to extract the aroma and flavor from the core of the rice, highlighting the skill of the chief brewer. This daiginjo is the highest of its class, with a pure, uncontaminated taste, premium elegance, and delicate aroma.
